Apple Oat Balls
- ¾ cup old-fashioned oats (gluten-free if you are GFCF)
- 1 cup pitted Medjool dates (check even if they say they are pitted, I still found some pits)
- 1 ½ cups dried apple rings
- 1 teaspoon ground cinnamon

Place the oats in a food processor
Pulse for 30 seconds
Set aside ¼ cup of the ground oats in a bowl. Place the remaining ingredients in the food processor
Pulse to combine until a ball starts to form.
In the original recipe, these are cut into small bars. We decided to roll them into balls instead.
Roll the balls in the reserved oats until evenly coated.
