Lunchbox Treat:Baked Apple and Pear Chips

These chips are an excellent addition to any lunchbox. They are healthy and delicious in addition to being inexpensive and easy to make. Just a warning: make a big batch. We ate this batch in one day!
- Coconut oil (for oiling pans)
- Juice of 1 clementine (or a couple of tablespoons of any citrus juice)
- Ground cinnamon (optional)

Core the apples and pears.
Slice them thinly with a mandoline or knife.
Place a metal rack inside a baking sheet and brush the rack with the oil.
Toss the fruit in the citrus juice. This prevents discoloration.
Arrange the fruit on the wire rack.
Sprinkle with cinnamon, if desired.
Bake at 200 degrees for 2 hours or until the chips are crisp and lightly browned.
Allow the chips to cool completely, then store in an airtight container. If you keep them longer than a few days, it’s a good idea to store the container in the fridge.
