Homemade Wheat Thins

Just in time for back to school in Texas, we have a homemade lunchbox staple that will save you money: wheat thins. It’s so easy your kids can do most of the work! My kids eat so many crackers that I doubled the recipe you see here.

Ingredients

  • 1 ¼ cups whole wheat flour
  • 1 ½ tablespoons sugar
  • ½ teaspoon table salt, plus additional for topping
  • ¼ teaspoon paprika
  • 4 tablespoons unsalted butter, cold is fine, cut into small bits

Preheat oven to 400 degrees In a food processor, combine all ingredients until the butter is evenly dispersed in the crumbs.

Drizzle in ¼ cup cold water with the machine running.

Step 4

Run it until the mixture begins to form a ball.

Step 5

Roll dough out, ½ at a time, until it is VERY thin, the thinner the better. I used a pizza cutter to cut out cracker squares.

Step 6

Place the crackers on baking sheets and dock them with a toothpick or skewer.

Step 7

Sprinkle with additional salt. Bake 5-7 minutes or until crispy and browned. Cool in baking pans on racks.

Serve them up!
