Homemade Wheat Thins
- 1 ¼ cups whole wheat flour
- 1 ½ tablespoons sugar
- ½ teaspoon table salt, plus additional for topping
- ¼ teaspoon paprika
- 4 tablespoons unsalted butter, cold is fine, cut into small bits

Preheat oven to 400 degrees In a food processor, combine all ingredients until the butter is evenly dispersed in the crumbs.

Drizzle in ¼ cup cold water with the machine running.
Run it until the mixture begins to form a ball.
Roll dough out, ½ at a time, until it is VERY thin, the thinner the better. I used a pizza cutter to cut out cracker squares.
Place the crackers on baking sheets and dock them with a toothpick or skewer.
Sprinkle with additional salt. Bake 5-7 minutes or until crispy and browned. Cool in baking pans on racks.
Serve them up!
