Lunchbox Treats: Homemade No-Bake Granola Bars

My kids love granola bars. You can toss them in lunch boxes, keep them in the car for hangry after school situations, and keep one in your bag for you! These are delicious, customizable, and last a long time if you store them in the freezer.
- 2 cups old-fashioned rolled oats (gf if needed) - Smile Link
- 2 cups crisp rice cereal
- ½ cup dried fruit (I used tart cherries)
- 1 cup nuts or seeds (I used a mix of pepitas and sunflower seeds)
- 1/3 cup coconut oil or butter
- 1/3 cup honey or brown rice syrup
- 1/3 cup brown sugar
- ¼ teaspoon salt
- ½ teaspoon vanilla extract
- 4 ½ ounces chocolate (chips or chopped, I used a mix of bittersweet and semi-sweet chips)

Combine the oats, rice cereal, dried fruit, and nuts or seeds in a large bowl and set aside.
Melt butter or oil, honey or syrup, brown sugar, and salt in a saucepan over medium-high heat. Bring to a rapid boil and cook 1-2 minutes, until mixture thickens. Stir in vanilla extract (it will sputter a little)
Pour syrup mixture over oat mixture and stir to combine. Let this cool for 5 minutes.
Sir in the chocolate. Press the mixture firmly into an 8x8 pan (a silicone spatula helps with this).
Freeze for 15-20 minutes. Cut into 18 bars.
Store granola bars in a sealed container. They will keep 5 days at room temperature or a month in the freezer.
