Yogurt Chia Pudding with Fruit

This week we are bringing you 7 simple treats for lunchboxes to inspire you as the new school year begins. This recipe is super easy, totally delicious, high in protein, and a healthy snack for the whole family. You could even serve this for breakfast and feel good about it! Your kids can make the whole thing, it’s just dumping, pouring, stirring, and waiting.


  • 6 ounces greek yogurt
  • ¼ cup milk of choice (I used unsweetened coconut milk)
  • 2 tablespoons chia seeds (I used white so they are less obvious)
  • 1 tablespoon honey
  • ½ teaspoon vanilla extract
  • Fresh fruit, for serving (optional)

Step 1

Combine all ingredients in a bowl.

Step 2

Whisk to make sure everything is evenly distributed. Stick it in the fridge for a few hours. If you split it into 4 smaller bowls it will be ready in 2-3 hours. We did this in the morning and it was ready for an after-dinner treat,

I layered the pudding in jars with pitted fresh cherries and packed them into lunchboxes. Done!
